Many people don’t realise how easy it is to emulate that smokey deliciousness of food usually prepared over an open fire.

I often cook curries or potjies on a gas cooker for the sake of convenience. You have to admit that gas is easy and clean if you want to take the kitchen outdoors.

My secret to getting that depth of flavour to a dish prepared on gas (or on the stove top for that matter) is to cup a piece of charcoal in some oven foil. I then add a teaspoon of ghee or cooking oil on the coal and let it float covered for about 30 seconds.
